Baking fun: Clementine cake
I found this
clementine cake recipe
on Pinterest and have been making it at least every other week.
First gather all the ingredients, plus a cute little helper.
Ingredients: Boiled clementines, sugar, almond meal, eggs and baking powder.
Get your helper to chop the clementines in the food processor.
Mix the eggs.
Add the sugar and mix.
Add the almond meal plus baking powder and mix.
Add the clementines and mix (and do not let your little helper try the mix at this point, because it contains raw eggs).
Pour the mix into your buttered (and floured) spring form (we decided to make a bunch of little cakes). Bake in the oven at 375 F for 45 minutes (check it and decide if it needs more time).
